PREFACE : European Union funded research into food production, food safety, and health and nutrition
has been a very significant and successful aspect of the framework programmes
over the past ten years.
The current FAIR programme where food research is covered
under area 3 is no exception and it has certainly been one of the most popular with respect
to the demand for funding and the exceptionally high quality of the proposed research.
This has allowed us to fund research which we feel will truly reflect the original
objectives of the programme, namely, to improve the competitive position of the
European food industry, along with discovering a better understanding of the role of
food in improving the general health and well-being of the European consumer. The
projects presented in this catalogue cover the whole range of the modern food industry
and its research base and accurately reflect where it wants to be in the next century.
Understandably,
there is an emphasis on new technologies and on the applications of
biotechnology, not just in food processing, but also in crop breeding to produce a range
of raw materials for specific nutritional requirements.
